Guys, welcome to my new obsession - herb salad dressings! Once you hop on this bandwagon you will not want to get off.  This recipe began with me wanting to use up some of the dill growing in my garden. Dill is a weed and it grows as such! Once you plant it it can take over the entire garden! I planted dill one year and haven't needed to replant, because the seeds travel so well. They travel so well that I have a lot of dill in the backyard and most years I've used it a bit, but I've mostly given it away - yay for my friends and boo for me :(.  So this year, I figured I'd try to consume more of these wonderful herbs given their amazing nutritional benefits.  That's how I came up with salad dressings incorporating the herbs right into the dressing.  I also wanted to add more creaminess, as well as protein to the dressing itself because I am constantly on the go and if my dressing is nutrient dense, then it takes some of the panning out of my meals.  So I added a generous helping of hemp hearts which boosted the protein and provided a rich creaminess to this dressing.

This dressing can use all sorts of herbs, the recipe itself calls for dill, but if dill isn't your cup of tea, then by all means try something else.  Basil is lovely, so is cilantro, but use what you like and just go with it! I love herbs because they are so cleansing, they contain a concentrated amount of phytonutrients (you can tell by their pungent taste), most support liver detoxification and contain significant amount of chlorophyll.  They also add a lot of flavour to meals, which generally helps reduce the amount of salt or sugar needed in order to please our palates. I recommend we all increase our intake of culinary herbs to boost our overall health.

This recipe is extremely simple, you'll need a blender and the ingredients called for which include a bunch of washed and de-stemmed dill, olive oil, lemon juice, vinegar (I like apple cider or rice wine), hemp hearts, nutritional yeast and garlic or garlic powder which are both optional and sea salt to your taste. You need very little salt, if at all, but you can add some salt to your liking.  Place everything in a blender and blend for one minute until everything is smooth.  I like to use this immediately but in can store in an airtight container for a few days.

  • 1 bunch of dill washed and de-stemmed
  • 4 tbsp of olive oil
  • juice of 2 lemons
  • 4 tbsp apple cider vinegar or rice wine vinegar
  • 1/2 cup hemp hearts
  • 2 tbsp nutritional yeast
  • 1 clove of garlic or 1/2 tsp garlic powder (optional)
  • sea salt to taste
