Three Ingredient Blender Pancake

This has to be the simplest recipe I've shared so far.  Not kidding that this takes minutes to prepare and is a great weekday or weekend breakfast. I was inspired to make this recipe as I was preparing a three week detox to offer to my clients.  I wanted to offer something hearty for them to have on the weekend so I was inspired by a few recipes on the net and tweaked things until I was happy with the results and voila I ended up with this quick blender friendly pancake recipe.  I made this for myself and my husband at first as we were going through the cleanse, but my daughters, especially the eldest, fell in love with them and asks for this particular recipe every chance she gets. Actually I tweaked it a bit further for her and made waffles out of the same recipe which she again chose over traditional waffles I generally make.  So it's definitely kid friendly.

To make the recipe you just need ripe bananas, water and rolled oats. Throw them into a blender and blend for one minute. Then you cook them on low heat in a nonstick skillet.  Cook until the pancake forms bubbles and is golden brown and cooks through, flip over and cook the other side for a further minute until golden.  That's it - simple and quick.  It's best to let them rest for a minute or two before consuming to allow the pancake to firm up. Serve with fruit and syrup and enjoy a quick and hearty breakfast.

This is a great pancake when you have hardly any ingredients on hand but still want pancake! Gluten free and a hit with the kids!
Ingredients
  • 3 medium ripe bananas
  • 2 cups rolled oats
  • 2 cups of water
  • Vanilla (optional)
  • Cinnamon (optional)
Instructions
  1. Place all ingredients in a blender and blend for one minute.
  2. Measure 1/6th of the mixture in a non-stick pan lightly coated with coconut oil
  3. Cook on one side on low until bubbles form and the pancake is cooked through. Flip over and cook for a further minute until the bottom of the pancake is golden.
  4. Repeat with the remaining mixture.
