creamy vegan dressingSummer has arrived and with it, it brings an array of fresh vegetables.  Summer is the best time for us to enjoy fresh vegetables and have fresh salads for lunch and even dinner!  Personally, most of my summer meals are made up of salads so I'm always looking for new fresh and healthy ways to dress my delicious greens.  This dressing doesn't take more than 5 minutes to whip up and it's ridiculously good and good for you!  It helps us all eat more raw fresh veggies - it's even a hit with my kids! This recipe makes them gobble up kale and collard greens without any complaints. They don't even notice they're not eating lettuce when I use this dressing.

I always make the full recipe which makes approx. 1 and 1/4 cups.  I'll use what I need for my salad and store the rest in a jar in the refrigerator.  It will keep for approximately ten days in the fridge, but trust me, it won't last that long.  Oh by the way, in case you're wondering, the veggies in the picture are radishes - freshly picked from my garden! I used heirloom organic seeds and they are absolutely delicious.  They've grown fairly large and some are closer to the size of beets vs radishes.  100% natural - 100% delish!

The ingredients in this recipe are extremely nutritious.  I intentionally use most of the ingredients each day for their nourishing effects.  Below are the highlights of a few of the ingredients:

Apple cider vinegar - the apple cider vinegar I use is naturally fermented, raw and unfiltered with the mother present.  This means that it's chock full of bacteria and enzymes and full of probiotic benefits. Per the various studies conducted on apple cider vinegar, it has been proven to help acid reflux and heartburn, balance blood sugar (as it inhibits the digestion of some starches), promotes healthy cholesterol, supports weight loss and nutrient absorption. Plus it's delicious!

Olive oil (extra virgin) - where do I start and how can I summarize the myriad of benefits found in extra virgin olive oil! Truly an amazing food that has tremendous nutritional benefits. Olive oil has been extensively studied and found to decrease the risk of heart disease, lower blood pressure, lower LDL cholesterol, reduce the risk of cancer, reduce inflammation (thanks to the polyphenols found in olive oil which function as both antioxidants and anti-inflammatory to the body.)

Sesame seeds - Sesame seeds are a mineral powerhouse.  They are an excellent source of copper, manganese, calcium, magnesium, iron, phosphorus, zinc and selenium.  They're also a good source of dietary fiber and contain particular beneficial fibres similar to flax seeds called lignans, and have been shown to have a cholesterol-lowering effect in humans and to prevent high blood pressure.

Ingredients
  • 3/4 cup apple cider vinegar
  • 1/4 cup extra virgin olive oil
  • 1/4 cup of water
  • 1 tbsp. coconut sugar/monk fruit sweetener/maple syrup
  • 2 tbsp. sesame seeds
  • 2 tbsp. hemp hearts
  • 1 tbsp. nutritional yeast
  • 1 tsp chia seeds
  • 1 tsp garlic powder or 1 clove of fresh garlic
  • 1/2 tsp sea salt
Instructions
  1. Place all ingredients in blender or nutribullet and blend until smooth
  2. Use immediately or store in the refrigerator for up to 10 days.
