Chocolate Strawberry Chia Parfait

I have to admit that I love this recipe, maybe a little bit too much :). I've been making different versions of this chocolate chia pudding over the last few years and I play around with proportions and different ingredients but I really love this one. The combination of the avocado and banana provides the pudding such a creamy and fluffy texture. I really love the combo of the two! Now the strawberry chia jam is an added bonus to this yummy indulgence. It literally tastes like jam - although not quite as sweet and it's packed with chia goodness. Tastes great and is great for you - such a win-win!

This makes a great snack as is or you can turn it into a yummy breakfast that you can prepare ahead. The only recommendation I have for turning this into a breakfast item is to add some protein to it. Protein at breakfast is essential to help stabilize your blood sugar and ward off cravings later on in the day. So you can add 3 tablespoons of hemp hearts to each serving, which would mean 6 tablespoons in total for the entire recipe.  You can also add a protein powder, just make sure it's unflavoured as it will make the pudding far too sweet.  Here's another thing I'd like to point out. I have the dates as an optional ingredient because I personally feel they can be excluded because I like dark bitter chocolate.  My palate is really accustomed to having things lightly sweetened so I would start this recipe with just the banana as the sweetener, and only if you like it sweeter would you then add the dates.  The less sugar we consume the better our overall health will be in the long run, so even minimizing the use of natural sugar found in fruit will benefit us. Having said that, if you like it with the dates, that's fine - there's no guilt here. You're still having a whole food and this is packed with fibre (thanks to the chia seeds) and healthy fat and both will help slow down the metabolism of the natural sugar found in the banana and dates.  It's not always about cutting out foods but more about knowing how to combine things to optimize the nutritional benefits naturally found in whole foods.

This takes minutes to make, tastes delicious and is loaded with fibre, EFA's and vitamins and minerals
Ingredients
  • Chocolate
  • 1 1/2 cups of water
  • 1/2 medium avocado
  • 1 medium ripe banana
  • 2 1/2 tbsp cacao powder
  • 3 tablespoons chia seeds
  • 2 small soft dates (optional)
  • Strawberry jam
  • 1 cup of fresh strawberries
  • 2 tbsp chia seeds
Instructions
Chocolate
  1. Place water, avocado, banana, cacao powder (and optional dates) in a blender and blend until smooth approx. 60 seconds.
  2. Place blended mixture in a mason jar and add chia seeds and stir with a fork until incorporated. Seal jar and place in the refrigerator overnight or a minimum of 2 hours. This will allow the chia seeds sufficient time to absorb the liquid and become gel-like.
Strawberry jam
  1. Place strawberries in a blender and blend until smooth.
  2. Place blended strawberries in a mason jar and add chia seeds and stir with a fork until incorporated. Seal jar and place in the refrigerator overnight or a minimum of 2 hours. This will allow the chia seeds sufficient time to absorb the liquid and become gel-like.
Parfait
  1. When ready to enjoy, create layers of chocolate, strawberry jam and fresh strawberries. Splitting both the strawberry jam and chocolate pudding equally into two portions.
