They are rich in essential fatty acids, specifically omega 6 (2500mg per cup); vitamin C (25% DV); folate (30% DV); vitamin K (39% DV) and vitamin E (16%DV). They are also a good source of various minerals including potassium, calcium, magnesium, phosphorus, copper and manganese. Pumpkin seeds are another star ingredient providing a myriad of antioxidants and minerals to your diet. In this recipe you're provided with iron (23% of DV), magnesium (38% of DV), phosphorus (33% of DV), zinc (14% of DV), copper (20% of DV) and manganese (43% of DV).
