Post today is short and sweet and totally guilt free.  I love bubbly, fizzy drinks, especially in the summertime.   This is my version of a faux-jito - a minty, sweet and sour bubbly version of a traditional mojito, which would also traditionally include rum.  Honestly, I'm fine if my clients include alcoholic drinks in their diet (in moderation), but I personally don't care for it.  I don’t tolerate alcohol very well anymore,  so I skip the alcohol and still enjoy the refreshing taste of a mojito. I figure I could use the extra calories elsewhere in my diet and I just don't feel the need for it.  No judgement on those who have alcohol, but I prefer my fizzy drinks alcohol free. 

This is super simple to make. All you need are limes, fresh mint, carbonated water and the optional coconut sugar for added sweetness. Sometimes I make this without coconut sugar when I don't want the sweetness, but just crave the refreshing minty and sour flavours. Other times I want to taste the sweetness and I include the coconut sugar.

Start by washing the mint (approx 2 springs of fresh mint), and lime.  Squeeze the juice of one lime into an 8 oz glass and add the coconut sugar (if using), stir it until the sugar dissolves, then add in the mint leaves and lightly bruise them with a spoon or other appropriate utensil to allow the flavour to be released. Then top with some crushed ice and soda water.  Enjoy!
